Certified organic (AB, Ecocert), certified biodynamic (Biodyvin), 100% spontaneous fermentation, no added sulphites, no additions or manipulations in the cellar. From a single plot planted in 1960 on the bottom of the cliff behind the estate. Limestone, limestone gravel and schist with a high proportion of red clay (lots of iron in the soil). 80% Grenache Noir, 20% Shiraz. 5–10% whole bunch.

Lots of liquorice on the nose. Red fennel and paprika! Spicy spicy spicy. Cranberries and red earthiness. Long and savoury and crunchy. So deliciously ambrosial and singing that it’s almost easy to overlook how very seriously beautiful this wine is. (TC)
